Lucky Gut-Loving Cookie

Guest recipe and blog by Sarah Mason / @therootedblonde

Cookies that are healthy?
Looks like it’s your lucky day!

When you bake up a batch of these tasty good-for-you treats, you’ll be gifting your body a great source of:

+ Carbs & fiber from the oats
+ Protein from the sun butter
+ Antioxidants from maple syrup & cinnamon
+ Minerals from the pink Himalayan sea salt
+ Magnesium from the dark chocolate

And of course, let’s not forget all of the amazing benefits you’ll also be getting from Just Thrive Probiotic

+ Digestive power
+ Immune support
+ Healthy glowing skin
+ Better energy
+ A brighter mood

And yes – You CAN bake with Just Thrive Probiotic (which is why I love adding their gut health goodness to so many of my recipes). Even better – just one daily cap from Just Thrive Probiotic can keep your gut healthy and balanced all day long.

One last thing:

After you bake a batch of these cookies, you may notice something interesting – On the inside,  it’s green!! This is because the chlorophyll in the sunbutter has a chemical reaction with the baking soda.

No leprechaun tricks over here, and nothing processed or bad for you – This green cookie is completely safe and healthy!

Simple, healthy, delicious and the perfect fit for your St. Patrick’s Day celebration (or any other party).

I mean… it doesn’t get much better than this!

Here’s how you make my lucky gut loving cookies!

Lucky Gut-Loving Cookie

Ingredients:
  • 1/2 c organic oats
  • 2 tbsp sun butter
  • 2 tbsp maple syrup
  • 1 Just Thrive Probiotic
  • 1/2 tsp baking soda
  • dash of cinnamon
  • pink salt to taste
  • Dark chocolate for drizzle

Instructions:

  1. Blend oats until flour consistency & transfer to bowl
  2. Open and pour in your Probiotic capsule and baking soda
  3. Mix well & add in the rest of the ingredients
  4. Roll into balls and transfer to lined baking sheet
  5. Lightly press down to form cookie shape
  6. Bake at 350 for 15 minutes
  7. Melt dark chocolate and drizzle over cookies
  8. Let cool until chocolate hardens and enjoy!

This recipe makes 4 good size cookies that pairs perfectly with your morning coffee.

But wait, it gets better!

You can also skip the baking & fold in the chocolate chips if you’re looking for healthy cookie dough that you can eat straight from the bowl or roll into little balls & freeze.

Personally, I love adding them to my smoothie bowls & nice cream!
