Greek Game Day 7 Layer Dip

This Greek 7 Layer Dip is the perfect game day snack! When I eat traditional 7 layer dips, I am left feeling tired and bloated! That’s because they are usually filled with preservatives and additives that wreak havoc on your gut health. But who doesn’t love a good dip?? Especially for parties or just for a snack? They’re so simple to put together, with easy to find ingredients.

This particular Game Day Dip features fresh herbs that make it so flavorful, and it’s also packed with some yummerific hummus. To be honest, I was a little intimidated by the idea of making fresh hummus, but it turned out to be way easier than I thought! It is actually a lot cheaper to make your own too and you know that there aren’t any additional ingredients added. It's very fresh! I personally like to add in some extra garlic for double “yum” and double health.

Greek Game Day 7 Layer Dip

Ingredients:

For the hummus:

  • 1 15.5 ounce can garbanzo beans drained (save the liquid)
  • 2 ½ tbsp tahini (can replace with Greek yogurt)
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic
  • ½ tsp cumin
  • ½ tsp salt
  • Liquid from garbanzo beans (as needed for the perfect consistency)

For the tzatziki sauce:

  • 1 ½ cup Greek yogurt
  • 1 tbsp fresh chopped dill
  • 2 tbsp fresh chopped parsley
  • 1 clove garlic
  • 2 capsules of Just Thrive Probiotic

For the toppings:

  • 1 cup chopped cucumber
  • 1 cup diced grape tomatoes
  • ½ cup olives
  • ½ cup feta cheese
  • ¼ cup chopped red onion

Instructions:

  1. For the hummus, add drained garbanzo beans to a food processor along with tahini, lemon juice, 1 clove of garlic, cumin and 1/2 tsp salt. Pulse for about 1 minute.
  2. Add in the olive oil and 2 Tbsp of the liquid from the chickpeas into the food processor. Add more liquid as needed.
  3. Spread hummus into an even layer in an 8 by 8-inch baking dish.
  4. In a medium mixing bowl stir together Greek yogurt, Just Thrive Probiotic (open capsules, dump in contents), parsley, dill and remaining garlic.
  5. Add the yogurt mixture over the hummus and spread into an even layer.
  6. Top with cucumbers, tomatoes, olives, feta and onions.
  7. Serve with gluten free pita chips or veggies!
