Chocolate Peppermint Gut-loving Granola Bars

Ingredients

  • 1 and 1/2 cups rolled oats (I used One Degree sprouted oats)
  • 1 and 1/2 cups Gluten Free cereal (I used lovebird plain cereal)
  • 1/4 cup coconut oil
  • 1/4 cup coconut butter 
  • 2 Tbsp flax seeds
  • 2 Tbsp hemp hearts
  • 2 Tbsp chia seeds 
  • 1/4 tsp salt 
  • 2 Tbsp favorite granulated sweetener (I used Tely Organics Sweet - coconut sugar would work great too!)
  • 2 Tbsp favorite liquid sweetener (honey, maple syrup or yacon syrup) 
  • 1/3 cup cacao powder
  • 1/4 tsp peppermint extract 
  • 2 capsules of Just Thrive Probiotic
  • optional: 2 scoops collagen for extra protein 

Directions

  1. Line a 9x9 inch baking pan with parchment paper. 
  2. Add coconut oil, coconut butter, granulated sweetener, and liquid sweetener to a saucepan over medium heat and cook, stirring frequently, until everything is melted. 
  3. Take saucepan off of heat, and stir in cacao powder, chia seeds, peppermint extract, salt, oats, cereal, hemp hearts, flaxseeds, and the contents of the Just Thrive Probiotic capsules. Mix until everything is combined. 
  4. Firmly press mixture into baking pan and pop in the refrigerator for about 1-2 hours. 
  5. Cut into bars and enjoy!
